
Celebration Chicken Biryani
Biryani is not dinner; it's a verdict. When the seal comes off the pot at a wedding, an Eid table, or a graduation, everyone present becomes a critic. Learning your family's biryani means learning what they think perfect rice, tender meat, and patience look like.

Where this dish comes from
Hyderabadi, Sindhi, Karachi-style, Lucknowi, Malabar — biryani is a family of dishes, each city certain of its supremacy. Common ground: marinated meat and par-cooked rice layered and steamed together (dum) so they finish as one.
This chicken version follows a broadly Pakistani/North Indian home style, sized for a family pot rather than a wedding cauldron.
Ingredients
Marinade
- 2 lbs bone-in chicken pieces
- 1 cup yogurt
- 2 tbsp ginger-garlic paste
- 2 tsp red chili powder
- 1/2 tsp turmeric
- 2 tsp biryani or garam masala
- Juice of half a lemon, 2 tsp salt
Rice & layers
- 3 cups aged basmati, soaked 30 minutes
- Whole spices: 4 cardamom, 1 cinnamon stick, 4 cloves, 2 bay leaves, 1 tsp cumin seeds
- 2 large onions, sliced and fried to deep brown (birista)
- Handful each mint and cilantro
- Pinch of saffron soaked in 1/4 cup warm milk
- 3 tbsp ghee
- Salt for the rice water — 'sea salty'
The method
Step 1: Marinate the chicken at least 2 hours, ideally overnight.
Step 2: Fry the sliced onions slowly in ghee until deep brown and sweet. Set aside half for layering; leave the rest in the pot.
Step 3: Cook the marinated chicken on the fried onions until nearly done and the fat separates from the masala.
Step 4: Boil the soaked rice in heavily salted water with the whole spices until 70% cooked — a grain should snap in the middle. Drain immediately.
Step 5: Layer: chicken masala on the bottom, rice on top, scattered with birista, mint, cilantro, and the saffron milk. Some houses do two rounds of layers; ask yours.
Step 6: Seal the pot — dough around the rim traditionally, tight foil practically. Steam on the lowest heat 25–30 minutes with a heat diffuser or tawa underneath.
Step 7: Rest 10 minutes. Open at the table. Serve from top to bottom so every plate gets both layers, with raita alongside.
Family notes ✎
- The 70% rice rule is where biryanis are won and lost. Elders test by pressing a grain between their fingers — learn their exact standard.
- Aloo or no aloo (potato) is a border dispute within families, not just between cities.
Substitutions
- No saffron? Warm milk with a pinch of turmeric gives color, though the perfume is its own thing.
- Boxed biryani masala is a respectable weeknight bridge — many aunties use it and deny it.
