Coconut Rice
Coconut rice is comfort across Nigeria's coastal south — Lagos, Delta, Cross River — where fresh coconut was once grated at the door. Diaspora versions lean on canned coconut milk, but the signal is the same: creamy, lightly sweet rice that pairs with peppered chicken, fried fish, or stands alone.

Where this dish comes from
Coastal Nigerian coconut rice differs from Caribbean rice-and-peas in technique and seasoning, though both share coconut richness. Nigerian versions typically use Nigerian curry and thyme lightly, with sweet corn kernels stirred in at the end.
Fresh coconut milk extracted from grated coconut gives the cleanest flavor. Canned works — choose full-fat and shake well.
Ingredients
- 2 cups (400 g) long-grain rice, rinsed until water runs clear
- 1 can (13.5 oz / 400 ml) full-fat coconut milk
- 1 1/2 cups (360 ml) water or light chicken stock
- 1 small onion (about 4 oz / 115 g), finely diced
- 2 tbsp (30 ml) neutral oil or coconut oil
- 1 tsp curry powder
- 1/2 tsp dried thyme
- 1 seasoning cube, crushed
- 1 cup (150 g) sweet corn kernels (fresh, frozen, or canned, drained)
- 1/2 tsp salt, plus more to finish
- 1 scotch bonnet, whole (optional)
The method
Step 1: Rinse rice until water runs clear. Drain well.
Step 2: Heat oil in a heavy pot over medium. Sauté onion until soft and translucent, about 4 minutes — do not brown.
Step 3: Add rice and stir until grains are coated in oil and turn slightly opaque at the edges, 2–3 minutes.
Step 4: Pour in coconut milk, water or stock, curry powder, thyme, seasoning cube, and salt. Drop in the whole scotch bonnet if using. Stir once.
Step 5: Bring to a boil, then reduce to the lowest heat. Cover tightly and cook 18–22 minutes without stirring until liquid is absorbed and rice is tender.
Step 6: Remove from heat. Fold in corn kernels. Cover and rest 5–10 minutes. The rice should be fluffy, creamy, and fragrant with coconut — not wet or sticky.
Step 7: Fluff with a fork, remove scotch bonnet, taste, and adjust salt. Serve with peppered chicken, fried fish, or stew.
Family notes ✎
- Delta and Lagos versions often add crayfish powder for depth; Cross River households may include scent leaf (nchuanwu) at the end.
- Some families cook coconut rice with smoked fish or dried shrimp — ask before you assume it's a plain side.
- Leftover coconut rice firms up beautifully and pan-fries well the next day.
Substitutions
- Preferred: Full-fat canned coconut milk — shake the can before opening.
- Preferred: Fresh coconut milk from 1 grated coconut simmered with 1 cup (240 ml) hot water, strained.
- Emergency: Light coconut milk plus 1 tbsp (15 ml) coconut oil for richness.
- Emergency: A pinch of sugar if your coconut milk tastes flat — some brands need it.
