Where this dish comes from
Catfish pepper soup is especially beloved in the Niger Delta and southeast, though it belongs to the whole country. Fresh catfish (live, if possible) gives the cleanest broth; frozen catfish works in American kitchens with slightly longer simmering.
Unlike thick fish stews, pepper soup stays translucent. The skill is not overcooking the fish after the broth is built — add fillets last, simmer gently, serve immediately.
Ingredients
- 1 1/2 lbs (680 g) fresh catfish, cut into 2-inch (5 cm) steaks (or tilapia fillets)
- 6 cups (1.4 L) water
- 2 tbsp (14 g) pepper soup spice blend
- 1 medium onion, sliced
- 2 scotch bonnet peppers, pierced whole
- 3 cloves garlic, crushed
- 1 tbsp (6 g) grated ginger
- 1 seasoning cube
- 1 tsp ground crayfish (optional)
- 1 tsp salt, to taste
- Scent leaves (nchanwu) or basil, handful
- 1 tbsp (15 ml) lime juice, to finish
The method
Step 1: If using catfish steaks, pour boiling water over them briefly to tighten and remove surface slime. Drain and rinse gently.
Step 2: Bring water, onion, garlic, ginger, pepper soup spice, seasoning cube, and salt to a boil. Simmer 15 minutes to build the broth.
Step 3: Lower heat to a gentle simmer. Add catfish pieces in a single layer. Do not stir aggressively — 8–10 minutes until fish is opaque and flakes.
Step 4: Add crayfish if using. Taste and adjust salt and heat.
Step 5: Stir in scent leaves and lime juice off heat. Serve immediately in deep bowls.

- Delta families often add fresh uziza and scent leaves together; some Lagos versions keep it simpler with onion and pepper only.
- Live catfish cleaned at the market is the gold standard — note whether your family ever substitutes frozen and how they compensate.
Substitutions
- Tilapia fillets cook in 5–6 minutes — add at the very end.
- Extra ginger helps when frozen fish lacks the depth of live catfish.
