Okra Soup
Nigerian okra soup is a draw soup in the truest sense — fresh okra cut or blended to release mucilage, simmered with palm oil, crayfish, and seafood or meat until slick and savory. It is not the same as Louisiana gumbo; it is its own tradition.

Where this dish comes from
Okra soup appears across Igbo, Yoruba, and Delta kitchens with variation in cut (whole pods vs. blended), protein (seafood-heavy in riverine areas, meat inland), and whether ogbono is added for extra draw.
Fresh okra in season gives the best texture. Frozen okra works in diaspora but can be watery — pat dry before cooking.
Ingredients
- 1 lb (450 g) fresh okra, stems trimmed
- 1/3 cup (80 ml) red palm oil
- 1 medium onion (about 6 oz / 170 g), chopped
- 2 tbsp (20 g) ground crayfish
- 1 tbsp (15 g) locust beans (iru), rinsed
- 1–2 scotch bonnet peppers, whole
- 3 cups (720 ml) stock or water
- 8 oz (225 g) assorted meat or smoked fish, cooked
- 4 oz (115 g) fresh or frozen shrimp (optional, common in Delta versions)
- 2 seasoning cubes, crushed
- 1 tsp salt, to taste
The method
Step 1: Prepare okra: either slice finely across the pods (for moderate draw) or blend roughly half the okra with 1/4 cup (60 ml) water and slice the rest (for maximum draw). Fine cut = more mucilage.
Step 2: Heat palm oil in a pot over medium. Fry onion until soft. Add crayfish, iru, and scotch bonnet. Fry 2 minutes.
Step 3: Add sliced and blended okra. Stir and cook 5–7 minutes — the okra will become stringy and slick. This is correct.
Step 4: Pour in stock. Add cooked meats and seasoning cubes. Simmer gently 10–15 minutes. Do not stir excessively once the draw forms.
Step 5: Add shrimp in the last 5 minutes if using — they should curl and turn pink. The soup should be green, glossy, and visibly thick.
Step 6: Taste and adjust salt. Serve hot with eba, fufu, or amala. Okra soup thickens as it sits.
Family notes ✎
- Delta and riverine versions often use fresh seafood — periwinkle, crab, catfish — and may add more palm oil.
- Some families blend all the okra for a uniform draw; others keep sliced pods for texture.
- Adding a spoon of ogbono is a common shortcut when okra is not slimy enough — not traditional everywhere, but widespread.
Substitutions
- Preferred: Fresh okra in season — firm pods, no browning.
- Preferred: Smoked dried fish and crayfish for depth.
- Emergency: Frozen okra, thawed and patted very dry.
- Emergency: 1 tbsp ground ogbono stirred in if draw is weak.
